This continuing professional education (CPE) self-study course provides an in-depth review of food practices across the United States, while emphasizing the need for dietetics practitioners to gain an understanding of the many diverse cultures and foodways of their potential clients. It acknowledges that readers should not expect to become “experts” in all cultures, but instead, they should work to recognize personal biases and assumptions and subsequently strengthen their ability to provide individualized nutrition care that demonstrates cultural sensitivity and humility.

Upon completion of the required reading, learners will evaluate their comprehension through the CPE self-assessment exam. This case study-based exam will assess the learner’s awareness of the many cultural and religious food practices and food-related beliefs seen within communities throughout the U.S.

The required reading serves as an invaluable reference for registered dietitian nutritionists (RDN), certified diabetes counseling and education specialists (CDCES), nutrition and dietetic technicians, registered (NDTR), and nutrition educators. The case-study based CPE exam reviews key aspects of the text and assists the learner with practical application of the content.
