Description:

Seeking an experienced Food Service Director to manage the entire food service department.  The candidate will report directly to the CEO and will have ultimate responsibility for the foodservice operation, which currently involves skilled nursing facilities.
The right person has knowledge and experience in all phases of food purchasing, preparation, production control, budgeting, inventory control, safety, sanitation, equipment, food and labor cost control, menu development.

Responsibilities:

•    Plan, direct, coordinate, and oversee all aspects of food service department.
•    Reviews menus and supervises the handling, preparation, and storage of food, maintenance of equipment, records, and sanitation.
•    Maintains an efficient food service operation and a high quality food service staff by recruiting, selecting, training, developing, scheduling, supervising, and evaluating all food service personnel.
•    Adheres to and conveys a philosophy that supports the dignity, privacy, independence, choice, and individuality of residents.
•    Ensures meals are served in a timely, attractive, and tasteful manner.
•    Visits with residents to assure resident satisfaction and obtain feedback; meets with a Resident Council to obtain input regarding menus and satisfaction with meals.
•    Develops and utilizes policies, procedures, and systems to insure an efficient operation.
•    Develops, revises, and adapts work techniques and methods for more efficient operation of facilities and for training employees.
•    Adheres to all sanitary, safety, and legal regulations governing handling and serving of food.
•    Inventory, food and supply ordering, managing food and labor budgets.
•    Develops and operates within budget.
•    Maintains accurate records and reports (quality assurance, financial, payroll)

Requirements:

•    3-5 years managing food service department in long-term care, or hospitality industry.  Completion of state approved 90-hour dietary managers program or the equivalent and certification in food safety as required by state regulations.  Contract food service management experience highly desirable.
•     Minimum Education-Associates Degree.
•    Proven cost control success.
•    Knowledge of ODH regulations and Ohio Food Code.  Knowledge of federal regulations for nursing homes including F-Tag 371 and information from State Operations Manual- Guidance to Surveyors.
•    Demonstrated proficiency with budget management.
•    Knowledge of food handling, preparation, service, and operation of all kitchen equipment
•    Experience planning menus, special diets and ordering all food and supplies.
•    Basic computer skills.
•    Experience in preparing, monitoring, and managing food service budgets.
•    Must have previously managed staffing responsibilities including: recruiting and selecting new hires, disciplining staff, scheduling, supervising, and evaluating staff.
•    Ability to upscale menu.
•    Administrative ability extremely important.
